Baked Brie with Sundried Tomato & Basil

  • 1 sheet of puff pastry, thawed
  • 1 brie round
  • 3 Tbs sundried tomatoes
  • 4 basil leaves
  • 1 garlic clove
  • Pinch of SplenDishes Super Tuscan Blend
  • Pinch of salt and fresh cracked pepper
  • Olive oil
  • Preheat oven to 375 degrees(f).

In a small blender, combine sundried tomatoes, basil, garlic, Super Tuscan Blend, salt and pepper.  Pulse to combine.

Place puff pastry on baking sheet and lay brie in center.  Spoon tomato basil mixture on top of brie, then starting with one corner of the puff pastry, start wrapping the brie, making sure it stays well sealed.

Brush with olive oil and bake for 20-25 minutes or until golden brown.  Serve with crackers or crostini.
