Roasted Fingerling Potatoes

I love potatoes. I have about 1000 recipes for them too, but roasting them is always a sure thing. Fingerling potatoes are one of my favorites and these gemstone fingerlings are so beautiful with their bright and vibrant colors.

Look at those colors! They're named fingerling because they're long and skinny, like fingers! You can easily leave them whole, as they aren't very big in size. These gemstone fingerlings were a little larger, so I cut them in halves.

Toss them in olive oil and sprinkle with House Blend. So simple! Roast in a 400 degree(f) oven for about 20 minutes or until fork tender and golden brown.

Sprinkle with fresh chopped herbs (I'm using parsley here) and serve.

So many things you can do with these little potatoes. Just by roasting and adding fresh herbs (and maybe some fresh grated cheese?), you get a simple, but elegant side dish that goes with everything!

ROASTED FINGERLING POTATOES

Prep Time: 5 Minutes  Cook Time: 20 Minutes Difficulty: Easy Servings: 4

Preheat oven to 400 degrees(f).

Cut potatoes in half and drizzle with olive oil on a baking sheet. Sprinkle with House Blend.

Roast for about 20 minutes or until fork tender and golden brown.

Toss roasted potatoes with fresh herbs.
